A new restaurant in an old space will open Aug. 1 in downtown Cedar Rapids.

Bistro on the River is located at at 411 First St. SE. The space in the former Hach Brothers Building was completely gutted and refurnished.

Before becoming the bistro, the space was home to the River City Pub. Prior to that the restaurant/bar had been DC's Riverwalk.

Open at 6 a.m. Monday through Friday the hope is for the restaurant to change faces throughout the day. The bistro will close at 7 p.m. Monday through Thursday and 8 p.m. Friday. It will not be open on the weekend.

Bistro on the River will serve breakfast before transitioning to a cafe for lunch, and will serve appetizers and drinks in the late afternoon and early evening.

Breakfast will be served from 6 to 10:30 a.m. daily and includes and assortment of pastries - muffins, scones, cinamon rolls, pain au chocolat, coffee cake and doughnuts (available on Wednesdays only) - in addition to a breakfast bowl, sandwich and burrito, plus french toast and croque madame.

Lunch will be served from 10:30 a.m. to 2 p.m. with an assortment of sandwiches - crab cake, cranberry turkey melt, croque monsieur and vegetarian - and burgers plus a spcy mac and cheese and salads such as oriential, caesar, caprese, Greek and mixed greens.

After 2 p.m., the menu switches to small plates such as spinach dip, cheese platter, parmesan truffle frieds, tots and a selection of items from the lunch menu.

Get a pick me up any time of day from the espresso bar or wind down after a long day with draft or bottled beer - several local vendors are represented such as Sutliff and Backpocket - and wine.

As the bistro becomes established, the menu will expand to include dinner in a more upscale venue.

Brittany Hannah, who graduated from the Culinary Institute of America in New York with a bachelor's degree in baking and pastry arts management and just earned her master's degree in business administration from the University of Iowa, will be the executive chef.

Prior to opening the bistro Hannah worked at The Yacht Club Bakery and Yachtmans Steakhouse at Disney World. In Cedar Rapids, she worked at Zins, Elmcrest Country Club and Brewed Awakenings.
